Quick and easy quinoa egg muffins is so versatile and makes a nutritious breakfast or snack!
1 cup cooked quinoa
1/2 cup diced tomatos
1/2 cup diced peppers
1/4 cup cheese of choice
- seasonings of choice
- Preheat oven to 350°F
- Mix all ingredients together and make in greased muffin tins for about 20-30 minutes.
Makes about 10 muffins. You can also add in spinach, mushrooms, onions, carrots, etc… The possibilities are endless!
